In my quest to be eating better, I've decided to start a new regular (hopefully) feature for the Backstage Pass Radio Program: CHEW ON THIS!
I fancy myself to be a fairly good cook, but what I lack is inspiration. When I know how to cook something, I can cook the hell out of it, but my repertoire is short. I know there's ten gazillion new veggies and healthy ingredients out there, but I always gravitate to what I know in the grocery store. I need help, and that's where YOU come in.
Each week, I'm going to run a little contest on my Facebook and Twitter pages. On Tuesdays, I'll post that the contest is open, and (hopefully!) you can suggest which new ingredient I cook with. You can suggest any ingredient, as long as it's healthy and somewhat easy to find. I will announce the winning ingredient and give out the recipe every Monday on the show. Here are some simple guidelines:
- It should be healthy
- It should to be somewhat accessible for most people
- It should be low in sugar and fat for most WLS people
- Can be a vegetable, spice, herb, fruit, anything...but let's keep away from carbs (I wish!)
The winning suggestion will get: 1) A copy of my CD mailed to them 2) some other small weekly prize that will vary from week to week and 3) the recipe I create will be named after the reader who's suggestion I pick, and your recipe will go down in history in the "CHEW ON THIS!" section of my blog (forthcoming). HOW. COULD. YOU. RESIST!? (sarcasm)
So suggest away! Go ahead and try to stump me (which shouldn't be difficult). Mangia!
I always wish I did more with spaghetti squash. Looks and tastes like pasta, but it's a healthy veggie! It's great with tomato sauce, but now that it's warmer, how about something saucy, basil-y... Something unforgettable! ;)

I loooooooove spaghetti squash! I made it for the kids as a subsitute for actual pasta and GASP! SUPRISE! they LIKED IT. :)

since it is summer and gardens abound...how about zuchinni? I make a mean stuffed zuchinni with chicken and cheese.
